When we talk about global food than immediately Chinese, Italian, French delicacies immediately crop up in the mind. Mexican, Thai and American Fast Food also ring bell. But Malaysia do record much in the top notch global food. But their Kuih Ketayap is worth trying. It is Crepe with Coconut filling.These Crepes are normally served on breakfast table and really very tasty
Ingredients
One cup Flour
Two Eggs
Two Pieces Pandan Leaves
One to one and half cup Coconut Milk
Half table spoon Salt
Two Table spoons Vegetable oil
Few Drops Coloring, Malaysians use crushed Pandan leaves for green color
It not only gives color but also distinct flavor. Pandan leaves are very
similar to Iris leaves. Ask for leaves at Godrej Nature Basket.
Filling
One Packet Grated Coconut or Dessicated Coconut
3/4 Cup Brown/Palm sugar
One Leaf Pandan Leaf
Mix the floor and salt together into a bowl. Add the coconut ,ilk and the crushed Pandan leaf. Blend it well. The add egg and vegetable oil. Use the hand blender to mix it well.
Heat a non-stick pan on medium heat till it is hot when it hover your hand over the pan.Spray some palm oil.Pour in one big laddle of batter and swirl the batter till it creates a circle. When the batter is cooked, removed from pan on to a flat surface. You need not to flip the Crepe.
Add the filling at the closet end of the crepe and then roll it like spring roll. Make sure that the sides are folded in such a manner that the filling does not spill out.
Kuih Krtayap Crepes are ready to eat.
