like we Indians, Iraqis use a lot of spices, cumin, coriander, tahini, allspices are the prominent one.Sparingly, they use turmeric, curry leaves. They also uses pomegranate molasses which provides sweet an sour flavor.
Try their Dolman, you will simply love it. This is very similar to our bharvan taba sabjis, but with a little difference. Unlike other Iraqi delicacies, is not very spicy but very different and tasty. the veggies chosen for Dolman are normally egg plant, zucchini, tomato, shallots,cabbage, tomato and grape leave.
To Make Dolman You Need :
Core
1 Egg Plant (Baigan) Medium size
3 Zucchini Small
2 Tomato Large size
2 Shallots
4 Jalapenos or any kind of Teekhi Mirchi
Filling
2.5 cups Uncooked Medium Basmati or Jasmine Rice
1 Tablespoon Sugar
2 - 2.5 Tablespoon Salt (half portion for filling and half for water)
2 Tablespoon Red Curry Powder
1 can Tomato Paste
1 piece Tomato Mushed
half piece Carrot Shredded
1 piece Onion Grounded
3-4 cloves Garlic
Cabbage and Grape Leaves
First make core vegetables hollow. Keep aside the inside material of these veggies it will be used for
filling with rice Add little water in the filling stuff. also add inside material also with it. Fill hollowed vegetables with filling stuff nearly two third part to allow for rice growth. Boil cabbage leaves, cut out its thick stem. Place a little filling inside and roll the cabbage closed.Repeat the same process with grape leaves.
Take a large pot and layer the stuffed veggies inside.First stake the big one, cabbage and grape leaves roll will go on the top. Mix half lemon Juice and one third cup vegetable oil and two cup water well, and add this mixture in the pot. Put a lid on the pot. Bring to boil the pot for 5 to 7 minutes, remove the lid then turn the heat to medium for 30 minutes. There after continue cooking further for 10 more minutes on low heat. Let the juice settle. Dolman is ready.
